I wouldn't think water would have much, if any, effect on the absorption of minerals. I'm not qualified to answer this question (educationally speaking, I don't have a PhD in nutrition), but if you're eating live (raw) foods that thrived on water (as all life does) while it was alive, how much is it gonna "kill" the nutrients during ingestion/digestion?
Besides that, liquids go straight to your stomach any way - what's the difference between drinking a little during a meal & waiting until afterward? It'll bypass the food in your esophagus on the way down (and from what I've read, the ultimate goal of the pre-stomach digestive system - chewing & the esophagus - is to deliver the food to the stomach in liquid form for better absorption).
The only thing I could think of is the food getting washed down the esophagus, but that'll happen either way if you drink during or after the mea.
I don't know how much you drink during your meal (obviously sipping occasionally is quite different than taking "water breaks"), but I know that the natural way I've graviated towards is to sip if something is a little dry to chew relatively easily (particularly with breads).
