Warrior Diet?

I have read the Warrior Diet and after watching a docu-drama on Hannibal on BBC 1 (In the UK) last night, I was wondering how we know what the Roman's or Warriors of that period ate.
If you are marching over 1000 miles to invade countries, then meat unless you hunt for it will go off as would milk. Grains to make bread or what ever else you can make with it, would last. Bread after a few days would go off and water would have to be plentiful.
Honey and olive oil would last as would some fruits for a week at least and therefore could we say that the army ate at all at night and possibly went a few days with out food. Those staying at home could afford to dine on better food.
When Hannible went over the Alps what food did he take as there was an Army of at least 50,000 to feed and that is a lot of grain......
