MessageEvery (non crackpot) nutrition writer I've read in the last five years says that the egg is a miracle of nutrition, packed with protein, amino acids, vitamins and fats which your body needs to thrive. The albumin in the egg white helps the body use and process the cholesterol in the egg yolk, which defuses the concern (left over from the 70's) about cholesterol levels.
The only real concerns with "eggs every day" are a) you might not be getting the wide variety of foods you need for optimal health if you eat eggs to the exclusion of most other foods and b) once you start doing omelets, souffles, curds, fritattas, etc., the calorie count could quickly exceed your caloric needs. In other words, too many eggs will make you just as fat as too much of anything else.
