I have followed this type of diet for about 6 months and I dropped weight very quickly while not affecting my strength, or stamina, and without losing so much muscle mass that I appear too thin.
You do not "replace meat with bean and grains so yo don't eat more vegetables". I eat A LOT more vegetables because by reducing your food choices, you suddenly start looking for variety in the plant world. I started eating kale for the first time in my life and love it.
I struggled with creeping weight with age and I found that with 6 meals per day and including protein in each, there's not much room for error and it's hard to get lean unless you are very diligent. With a low fat plant based diet, you can't eat enough food to get too many calories. You stuff yourself and the weight just comes off.
I dropped 30 pounds in 5 months and I feel great. It works. Don't dis it until you really do it.
As a side note, the book that I actually followed is "Eat to Live" by Dr Furhman.
