Yep, just keep it under 30 grams a day. Eat as much chicken and stuff as you like. Keep in mind the "meat & potatoes" of this diet is red meat. This is because its fattier, making it easier to meet your calorie needs. The first day or two try to eat your carbs in the evening - they may cause you to get very tired/hazy. After you know how they'll affect you eat them whenever you please.
Make sure you subtract the fiber from the carb count too.
The straight PTTP is fine. The idea is not to start anything to strenuous as your body will already be going through alot trying to switch over to fat burning mode. Apparently it gets as bad as some guys actually reporting feeling like they are getting very sick (flu like symptoms) during this phase. Didn't happen to me, but you never know.
Make sure you're getting enough fiber and all your vitamins too. Good luck!
