its not really a "one meal a day" diet if you consider eating a handfull of veggies/fruits a "meal"
its about daily cyclical undereating and overeating. During the day, you undereat. This is not the same thing as a water fast. You could water fast, but thats not what the diet recomends. Check out the chapter on the "undereating phase." Eating is recomended.
During the night time (after work, and working out, whatever time that may be), you "overeat"- usually one big meal.
The book says to gradually adjust to this- undereat half the day, then eat two big (bigger than "normal") meals during the other half of the day. Gradually up the undereating phase- your body will adapt.
If you eat small servings of fruit and veggies during the day, eventually your appetite will adjust. Just give it time.
My recomendations are just that- if I'm way off base, my apologies. A large part of the book is about leanring to listen and respond to your body. If what I said doesn't work for you, find out what does and do that.
