MessageNumbers quoted in Hoffmekler's as well as any other books are not supported by anything except authors' ideas about what's right. Where 19 hours came from? Is it really different from 20? I don't think so.
I personally like fasting the whole day and having one big meal in the evening (whenever I feel doing it). That helps me with discipline. Some like nibbling on fruits or veggies during the day. The ultimate would be fasting for the whole day and gobbling everything in sight the next (intermittent fasting). Find the way you feel best and follow it. Check fast-5 website as well, it is free. This kind of eating has been around for a long time, much before the WD book, and there is no right or wrong.
Your weight ultimately depends on caloric balance, so the answer to the question "is one meal enough?" depends on the caloric value of that meal.
