MessageWhat you're doing is fine if it feels fine to you. You can accomplish a few things by eating during the undereating period - certain foods can actually help your body detox. Ori's latest book, the Anti-Estrogenic Diet, talks about this in great detail.
How much you eat during the day isn't something that's etched in stone, either. For people who are very active, it's almost a necessity. For myself, I find that when I cut back on my lifting, I naturally cut back on my eating as well, including during the day.
You ask if one big meal is "enough?" The proof is in the pudding - if you feel good, if your body composition is changing for the better, then I guess it's enough.
