Eating clean is good but it also boils down to what, when, and how much.
Try eating more lean protien and getting all of your carbs from vegies. Little or no food made from grain. Eat smaller meals more frequently. I usually take what I would eat for one meal and just break it up into two meals. Both of the above will limit how much fat your body stores. You can also take 8g of fish oil over the course of the day as this is suposed to boost the metabolism to burn an extra 400 calories as well as having many other great health benefits.
High intensity interval training (HIIT) is also very effective at burning fat, as are complexes.
Metabolizing fat DOES use up a lot of water. Perhaps you need a dedicated Nalgene bottle to, ah... you know.
If that isn't enough to help - you're just going to have to eat less since you're not burning many calories while you drive.
