I am currently one month into a gluten fast. The first week and a half was BAD, but after the initial withdrawal (I mean that literally, withdrawal, as in from a drug) I haven't looked back. I'm gonna stick it out until Memorial Day (the beginning of the BBQ season), and probably pick it up again in 2009.
Flour/wheat/gluten is also ubiquitous in Western foods. It is truly hard to eat out with this kind of diet. No bread, pasta, rice (most "fortified" rice has been sprayed with gluten so that the nutrients its "fortified" with sticks to it... the only rice I can eat is unprocessed brown rice). I'm told it takes 6 weeks to get out of your system, and another 6 weeks for your body to heal itself.
I sometimes indulge in icecream, cheesecake (I have found ONE without wheat), and sometimes snickers bars... I couldn't imagine what I would do if I eliminated refined sugar at the same time.
I have no resources for you, but lend you support. I too am on a very restrictive diet. But from my experience, I can say that you are wrong about feeling like crap on your diet. After the initial detox, you won't really crave what you've cut out of your daily consumption. You will have found other things in your diet to replace it. Your mind ultimately can control your appetites. And you will come to appreciate your mind's power before you are halfway through.
