MessageHere is what I have every day for breakfast. I LOVE THEM! Egg beaters (one serving), two eggs, curry powder (about a teaspoon), and cole slaw mix, a half cup to a cup (with no dressing, just the cut up cabbage and carrots). Mix this all up in a microwave safe container and cook for about three or four minutes in the microwave. The cabbage and carrot give it a great consistency. You could add cheese or flax meal for some fat if you want.
