MessageNo need to flip omelets, IMHO. I use kosher salt, fresh ground black pepper, and a bit of half-and-half in my eggs. I use lots of olive oil, a medium high heat, and just pour in the eggs relatively thin to the size of the pan, e.g., 1-2 eggs for a 6" frying pan. If the oil is hot, the eggs essentially float in it and don't stick at all. When it's mostly cooked, put your choice of ingredients on one half (I like grated extra sharp cheddar cheese), then use a spatula to fold the other half over top of the added ingredients, let it cook for another minute, and you're done. I make these from scratch to plate in 5 minutes. It's great, quick meal or part of a meal - start the pan heating with the olive oil in it while you're mixing the eggs in a bowl.
