MessageI dice peppers, onions, and broccolli and mix it into the egg batter. put the pan on low flame, and pour the eggs in after buttering pan. cover the pan and you won't have to flip them. You could (if you feel you HAVE to flip it but are still breaking them, slide the eggs from the pan onto a plate, hold the pan upsidedown over the plate, and turn your hands so that the plate is upside down over the rightside up pan)
If you use too many eggs (>4) and try to flip the omellet with a spatula it will break unless you have skills. put cheese on one half (extra sharp cheddar, or monterey jack work great) and fold the omellete in half. wait till the cheese melts and your good to go. My omelletes are between 3 and 6 eggs, depending on if I can afford to do nothing after eating them or not
